Søren Selin is a master of the senses, he loves to cook using taste, vision, colour and smell. His culinary philosophy is centred around fresh Nordic produce, combined with pure indulgence. He wants his diners to enjoy the whole experience of good food; what he serves is both a visual and edible feast. Having gained his expertise in a number of renowned Michelin starred restaurants in Paris including Jules Verne, the restaurant in the Eiffel tower and Le Relais Louis XIII , he returned to his roots. He now owns three restaurants in Denmark, including the AOC, which has an impressive two Michelin stars.
